Jinan's Mujadara recipe for December 31, 2005


2 cups lentils
water to cover
1 medium onion, diced
olive oil to fry onion
1 cup burgal
1 teaspoon allspice
2 teaspoons cumin
salt and pepper to taste


Boil lentils in water until just soft, about 20-30 minutes. In separate pan, fry onions in olive oil until slightly browned. Add onions and rest of ingredients to lentils and continue to simmer on medium low heat for another 30 minutes, until the consistency of porridge. Serve with pita bread and other maza items (small Lebonese dishes), like humus and tabouli.
